The Treat That Makes You Look Like a Pro!
You know that feeling when you need a crowd-pleasing dessert, but you don't have hours to spend kneading dough or frosting intricate layers? Well, I found the secret weapon, and it’s these Fun & Easy Cookie Cakes.
I recently whipped up a batch for two completely different events: first, as a post-field hockey game treat for a hungry team, and later, for a special Girl's Night with my daughter and her friends. The reaction was exactly the same: HUGE HIT! Everyone, from sweaty athletes to giggling teenagers to parents, thought I was a professional baker. The best part? They are ridiculously easy to make.
If you need a simple recipe that delivers major "wow factor" with almost zero stress, this is it.
The Recipe: Easy Mini Cookie Cakes
This recipe makes 12 individual cookie cakes.
Ingredients
2 Rolls Cookie Dough (16.5 oz each)
2 Cans Frosting (I used 16 oz Vanilla)
Sprinkles (The more colorful, the better!)
Supplies
Mini Pie Tins (6.8oz tins)
Directions
Preheat your oven to 350 degrees.
Press about 3 oz of cookie dough into the bottom of each mini pie tin. You want a thick, even layer that forms the "cake" base.
Bake at 350 degrees for 12–15 minutes, or until the edges are golden brown.
Remove the cookie cakes from the oven and let them cool fully in the tins. This is essential!
Once cooled, use a piping bag (or a zip-top bag with the corner snipped off) to pipe your frosting onto the top of the cookie cake.
I like to whip my frosting with a hand or stand mixer before filling my piping bag
Decorate generously with your favorite sprinkles.
Serve & Enjoy! Watch your crowd be amazed by your professional-looking, delicious dessert!
Why This Dessert Works
Customizable: You can use any flavor of cookie dough (chocolate chip, sugar, oatmeal raisin) and match your frosting to the season or event!
Individual Portions: No messy slicing required! Each person gets their own mini cake.
Speed: From start to finish, this treat takes less than 45 minutes, making it perfect for busy weeknights.
Give these Fun & Easy Cookie Cakes a try for your next team gathering, party, or just because. I promise you'll receive rave reviews—and no one has to know how easy they really were!
